Ingredients
  

  • 1 box white cake mix plus ingredients listed on the box (typically water, oil, and eggs)
  • 1 cup boiling water
  • 1 3 oz package strawberry jello
  • 1/2 cup cold water
  • 1 8 oz tub whipped topping thawed
  • 1 pint fresh strawberries sliced, for garnish

Method
 

  1. Prepare the cake mix according to the package instructions. Pour the batter into a greased 9x13 inch baking dish and bake at 350°F (175°C) for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once the cake is baked, let it cool for about 15 minutes. Then, using the handle of a wooden spoon, poke holes all over the cake, about 1 inch apart.
  3. In a small bowl, dissolve the strawberry jello in 1 cup of boiling water. Stir until completely dissolved, then add 1/2 cup of cold water. Pour the jello mixture evenly over the cake, making sure it seeps into the holes.
  4. Refrigerate the cake for at least 3 hours, or until the jello is set. Once set, spread the whipped topping evenly over the top of the cake.
  5. Garnish with sliced fresh strawberries before serving. Slice and enjoy your refreshing Strawberry Jello Poke Cake!
