Fresh Strawberry Cream Cheese Frosting

Ingredients
  

  • 8 oz cream cheese softened to room temperature
  • 1/2 cup unsalted butter softened to room temperature
  • 3 cups powdered sugar sifted
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberries pureed and strained

Method
 

  1. In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. This should take about 2-3 minutes on medium speed using a hand mixer or stand mixer.
  2. Gradually add the sifted powdered sugar to the cream cheese mixture, one cup at a time, beating well after each addition. The frosting should be thick and fluffy.
  3. Add the vanilla extract and strawberry puree to the frosting. Beat on low speed until the strawberries are fully incorporated and the frosting has a uniform pink color.
  4. If the frosting is too thin, add more powdered sugar, one tablespoon at a time, until you reach the desired consistency. If it's too thick, add a little more strawberry puree or milk, one teaspoon at a time.
  5. Use the frosting immediately to decorate your cake or cupcakes, or store it in an airtight container in the refrigerator for up to one week.
