- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the flour, baking powder, and salt to the wet ingredients, mixing until just combined. Add green food coloring until you reach the desired shade of Grinch green.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Press a red heart candy into the center of each cookie.
- Bake for 8-10 minutes, or until the edges are just starting to turn golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
