Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter softened to room temperature
  • 3/4 cup white sugar
  • 3/4 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup blue food coloring
  • 1 cup mini chocolate chip cookies for decoration
  • 1 cup white chocolate chips for eyes

Method
 

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper to prevent the cookies from sticking.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside. This step ensures even distribution of the leavening agents.
  3. In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Add blue food coloring until you reach the desired shade of Cookie Monster blue.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the semi-sweet chocolate chips.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Press mini chocolate chip cookies into the dough to create the Cookie Monster's mouth.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Once cooled, melt the white chocolate chips and use a piping bag or a small spoon to create the eyes on each cookie. Add a small chocolate chip to the center of each eye for the pupils.
