- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper to prevent the cookies from sticking.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside. This step ensures even distribution of the leavening agents.
- In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes with an electric mixer.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Add blue food coloring until you reach the desired shade of Cookie Monster blue.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the semi-sweet chocolate chips.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. Press mini chocolate chip cookies into the dough to create the Cookie Monster's mouth.
- Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Once cooled, melt the white chocolate chips and use a piping bag or a small spoon to create the eyes on each cookie. Add a small chocolate chip to the center of each eye for the pupils.
