  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, cream together the softened butter, cookie butter, granulated sugar, and brown sugar until smooth and well combined.
  2. Add the egg and vanilla extract to the butter mixture, beating until fully incorporated. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. If using, fold in the chocolate chips.
  3. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 8-10 minutes, or until the edges are lightly golden but the centers are still soft.
