Method
 

  1. Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, cream together 1/2 cup of softened butter and 1 cup of granulated sugar until light and fluffy. Add the egg and 1 teaspoon of vanilla extract, mixing well.
  3. In a separate bowl, whisk together 1 3/4 cups of all-purpose flour, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Spread the dough evenly into the prepared baking pan. Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  5. Allow the bars to cool completely in the pan on a wire rack. Once cooled, prepare the frosting by beating 1/2 cup of softened butter until creamy. Gradually add 2 cups of powdered sugar, 2-3 tablespoons of milk, and 1 teaspoon of vanilla extract, beating until smooth and spreadable.
  6. Spread the frosting over the cooled bars and top with 1/4 cup of sprinkles. Use the parchment paper overhang to lift the bars out of the pan and cut into squares. Serve and enjoy!
